Lough Erne Cakes

Lough Erne Cakes makes bespoke wedding cakes and dessert tables from Enniskillen in County Fermanagh, Northern Ireland. It is run by Baiba, a pastry chef trained in a five-star hotel who has been decorating wedding cakes for about 15 years and has trained with cake artists across Europe and the USA and at a Paris culinary school.

The process starts with a conversation about the wedding, venue and colours. Baiba sketches the design by hand, then offers a tasting of sponges, fillings and finishes, plans the timeline and delivery, and delivers and sets up the cake herself on the morning. Tiered cakes are finished in smooth fondant over a white chocolate ganache base, with handmade sugar or wafer paper flowers, toppers and figurines. Two to four tiers are listed, with prices from 325 pounds. The site also lists a cake menu of twelve flavours, French macarons and other dessert table treats, and cake tastings.

Baiba also teaches cake decorating through masterclasses at her cake studio and school.
